Vietnam doesn't run on one wedding season it runs on several, depending on the region. Broadly, peak season (roughly September through March) brings cooler, drier weather across most of the country and is the most in-demand window for luxury resort bookings; this is when Da Nang, Phu Quoc, and Hoi An are at their most reliable for outdoor ceremonies. Off-peak (April through August) brings warmer, more humid conditions in the south but often comes with greater vendor flexibility for couples wanting a more intimate, unhurried celebration.
